Strawberry Chia Jam




I put up a few Instagram stories whilst cooking this strawberry delight and I had so many DMs about it. I then went on to post the recipe on Instagram and then I thought to myself... this should be on my blog too! So here it is! 

To make strawberry chia jam you will need-
  • Approximately 400 grams of chopped strawberries minus the leaves (Strawberries are cheap as chips right now & they taste pretty damn good, atleast here in Delhi & NCR, India. Although having said that strawberry season is pretty much over now, so if you want to make this you better hurry up!)
  • 4 teaspoons of chia seeds
  • 5 teaspoons of coconut sugar 
  • 1 small lemon 
Prepping & Cooking Time- 15 minutes 

Cook the strawberries on low heat for about 10-12 minutes. Add in coconut sugar and mix well. I like  my jam with strawberry chunks and I use a potato masher to gently break the fruit. If you prefer a smooth consistency, feel free to use a blender.

Squeeze in the juice of one lemon. At this point turn the hob off. Then add in chia seeds. Mix well and let it cool to room temperature. Chia seeds will become jelly-like and absorb the excess water content. Keep refrigerated and use within a week. 

This is lovely on toast or pancakes, in porridge or yogurt or with granola... the possibilities are endless and I hope you love it as much as I do.
