Homemade Granola




Here's some Sunday evening breakfast inspiration. Homemade granola served with fruit and my favourite Sain Almond Milk.

Making granola at home is easier than you think and it is so much better for you. You control what goes into the mix, especially sugar! Granolas in the supermarket are usually loaded with sugar and the labels are often misleading.

Here's my recipe if you fancy trying this yourself. You will need-
Half a cup of buckwheat seeds
Half a cup of rolled or regular/porridge oats
2 teaspoons of flax seeds
2 teaspoons of watermelon/pumpkin/sunflower seeds (use a mix of all or whatever you fancy)
2 teaspoons chopped almonds
2 teaspoons chopped pistachios
2 teaspoons of melted raw virgin coconut oil mixed with 3 teaspoons of coconut sugar (mixed into coconut oil on very low heat)

You could also use honey or maple syrup instead. 1 table spoon is more than enough. If you are using honey or maple syrup, you will still need to add coconut oil as well.

Mix the dry ingredients with the coconut oil and sugar and bake for 15-20 minutes on 180 degree Celsius!

5 minutes before it's done throw in a handful of raisins and cacao nibs as well. You could also add a dash of cinnamon and/or vanilla extract for extra flavour. Although the flavour & smell from coconut oil is divine too!

These quantities make enough to fill up this small jar. I am so bad with quantities, I am thinking of getting a weighing scale & not eye ball everything ;)
